The only variable that changed: how well the staff knew the menu.
The problem before
Sports bars sell by suggestion. The Famous Fat Burger is on the menu. But the right server, on a busy Saturday, knows to mention the Fiery Irishman with chipotle mayo and pickled jalapeños to a guest who likes spice, or upgrade the side from hand-cut fries to sweet potato waffle fries for $2 more.
That's the entire game. A 4-top that came in for two burgers and two beers becomes a 4-top with appetizers, side upgrades, and a fourth round when the server knows the menu cold.
Fat Tommy's had the same challenge every restaurant has. Average tenure on the floor is short, every new server starts knowing nothing, the manager only has so many minutes during pre-shift, and by Friday night the new hires are guessing on ingredients and steering guests to "the safe stuff."
Pre-shift meetings weren't fixing it. Tommy didn't need a longer pre-shift. He needed his team to actually retain what was said.
What they did
Tommy uploaded Fat Tommy's menu PDF to ShiftTrained. The AI read every item: 14 burgers, 8 fatbreads, the Tin Can Tower Nachos build, every wing sauce, every entrée side combination. Twelve minutes later, hundreds of training questions were ready.
Specifics from the menu the AI surfaced and quizzed:
- Allergen flags. Pesto mayo on the Gobbler contains pine nuts. Mac & cheese balls share a fryer. Mayo-based sauces have eggs.
- Side combinations. Every entrée has a default side and premium-side upgrade pricing. Servers who knew the upgrade path captured the +$2 reliably.
- Fatbread distinctions. What's on the Chicago vs. the Supreme vs. the Margherita. Different audience, different upsell.
- Wing sauce knowledge. Hot Honey vs. Garlic Parmesan vs. Sweet Chili. Servers who knew the difference recommended confidently.
The manager reviewed the AI's allergen flags, approved them, and quizzes shipped to the staff via SMS. Every server studied on their own phone (no app to install) and the leaderboard went live.
That was it. No menu rewrite. No price change. No service-style overhaul. The only thing that changed was that staff actually knew the menu.
What changed on the floor
Servers stopped saying "uh, I'll check" when guests asked about ingredients. They stopped defaulting to the safest item when a regular asked "what's good tonight?" They stopped panicking on allergen questions.
Specific behaviors that emerged within weeks:
- Side-upgrade attach rate climbed. Hand-cut fries to sweet potato waffle fries to mac n cheese. The +$2 add-on captured more often.
- Confident specials description. Saturday-night specials that used to get one-line mentions now got the full pitch.
- Cross-table consistency. Two servers describing the same dish to two different tables now actually said the same thing about the dish.
None of these are big behavioral changes individually. Stacked across forty hours of weekly service, they showed up in the totals.
The 11% number
Average check totals up 11%. Same kitchen, same prices, same menu, same server roster. The team just knew what they were selling.
"Since we started using ShiftTrained, we have made no other changes. Check totals have gone up 11%. The training is doing the work for us." Tommy P., Co-Owner, Fat Tommy's Grill & Sports Bar ★★★★★ 5/5
What's next for Fat Tommy's
Tommy is rolling out:
- Allergen-flagged training reminders when a server's score on allergen questions drops.
- Seasonal menu refresh quizzes when specials rotate, uploaded directly from the new menu PDF in the same 12-minute pipeline.
- BOH (back-of-house) training when the kitchen module ships. Same pipeline, recipe cards instead of menu PDFs.
The pattern Tommy proved at Fat Tommy's: menu confidence is a measurable revenue lever, not a soft skill. Eleven percent, with no other changes, is the math.
