How Long Does It Take to Train a Server on the Menu?

The short answer is one most managers get wrong. It takes a lot less time than you think.

Nobody mentions this when they sell you a training binder. The menu you drilled in March is not the menu you are running in July. Seasons turn and items change. Specials come and go every week. You have hired people since the last time anyone sat everyone down. You 86'd a dish and put a new one in its place.

Every one of those is a little gap between what the menu says and what your people actually know. On a packed floor, those gaps are where an allergy question gets the wrong answer, where the upsell slips by, where a guest ends up knowing more about the plate than the person carrying it.
