Wine Test: Certifying Server Knowledge on Your Wine List

A wine test is the certification gate for restaurants that take their wine program seriously. Different posture from a wine quiz. Tests certify, score, and create permanent records: server X passed at 87% on this date, with these wrong answers, on this wine list version. The wine-specific question mix
A 30-question wine test pulls from your full wine list pool: 10 questions on producers + regions + vintages, 8 on food pairings (which wine matches which dish on your menu), 6 on price tiers + pour costs, 4 on tasting notes (acidity, oak, sweetness, tannin), 2 on glassware specs. The mix is configurable, a wine bar weights pairings higher, a steakhouse weights big-red Cab questions higher.
Why wine programs need test gates
Most fine-dining restaurants "train" servers on wine via shadow shifts and a binder of tasting notes. After three months, you have servers who can ID maybe 40% of the bottles by sight and pair maybe half of them correctly. With a wine test gated at 80%, you have measurable proof of who's ready to handle the wine program at the table. New hires can't pour from the reserve list until they've passed.
Sommelier-track development
Restaurants with sommelier-track development programs use wine tests as the milestone gate. Server passes the standard wine test → cleared for sommelier shadowing. Passes the advanced test (95% threshold, 50 questions) → eligible for sommelier-in-training role. Each milestone has a date-stamped record. That's the kind of structure restaurants with serious wine programs build with their training data.
Post-list-rotation verification
Wine list rotates quarterly. Without a test, your servers know the OG list cold and the new list vaguely. Issuing a wine test 2 weeks after every list rotation tells you who's caught up and who needs another coaching shift.
